Recipe Tuesday!! Puffed Apple Pancake!
Good Morning everyone! I wanted to post some of my favorite recipes on this blog, so Recipe Tuesday it is!!
About a year ago I was at my Grandma's house and she was searching for a recipe. She knew what it was supposed to be but didn't know the exact ingredients, we spent a couple hours combing through her recipes until I finally thought to google it and we came up with something very similar. The end result was amazing, she always make food 10 times better than anyone else, but this is actually one recipe of hers that I can replicate and it comes very close. This recipe is very easy and anyone can make it!

Puffed Apple Pancake
- 2 Apples(I like to use Gala, because they are my favorite to eat, but Granny Smith or Golden Delicious would work very well)
- 4 TBSP (1/2 stick) Butter (original recipe calls for unsalted, but I wouldn't ever have that in my house, haha)
- 1 Cup Milk
- 4 Large Eggs
- 3 TBSP Sugar
- 1 TSP Vanilla Extract (I just use a lid full of it)
- 1/2 TSP Salt
- 1/4 TSP Ground Cinnamon (I use a little bit more)
- 2/3 Cup All-Purpose Flour
- 3 TBSP Brown Sugar
Preheat oven to 425°F
Melt butter in the microwave
Peel and cut apples into thin slices and place in 9 x 13 pan
Pour melted butter evenly over the apples, making sure to cover each one
Place in oven for 10 minutes or until apples are tender
While the apples are in the oven we will assemble the pancake part of the meal.
Mix the milk, eggs, sugar, vanilla, salt, and cinnamon in large bowl until well blended.
Next add flour and whisk until batter is smooth.
At this point it should have been about 10 minutes, so pull the apples out of the oven and evenly pour the batter over the apples. After the batter is on the apples, sprinkle the entire top with the brown sugar. Place back in the oven for 20 more minutes.
VoilĂ ! The perfect puffed apple pancake! Sprinkle with powdered sugar or add maple syrup This meal is great at any time of day
