New Years Resolution or Goal Setting?

Every year I make the same resolutions; eat healthier, read my Bible daily and save more money.  Some years I have kept these going throughout the year and have done quite well but some years not so much.  This year I am not making resolutions but starting goals.  I know you may think that is the same thing but the difference is I am not going to hold myself to just this year, or if I fail in my goal I will just pick right up again and not wait until the end of a month or year.  Each day is a new day and if one day I fail, I will just pick up where I left off.   Here are some goals I am setting starting in this new year! 1) Eat/Live Healthier - This one is pretty self explanatory.  I need to stop all of my crazy eating habits.  I am not 18 and a distance runner anymore.  I cannot eat a pint of ice cream in one sitting.  (not that I have done that in many years, but you know what I mean.  I did eat 3 donuts in one sitting very recentl...

Recipe Tuesday!! Puffed Apple Pancake!

Good Morning everyone!  I wanted to post some of my favorite recipes on this blog, so Recipe Tuesday it is!! About a year ago I was at my Grandma's house and she was searching for a recipe.  She knew what it was supposed to be but didn't know the exact ingredients, we spent a couple hours combing through her recipes until I finally thought to google it and we came up with something very similar.  The end result was amazing, she always make food 10 times better than anyone else, but this is actually one recipe of hers that I can replicate and it comes very close.  This recipe is very easy and anyone can make it! Puffed Apple Pancake 2 Apples(I like to use Gala, because they are my favorite to eat, but Granny Smith or Golden Delicious would work very well) 4 TBSP (1/2 stick) Butter (original recipe calls for unsalted, but I wouldn't ever have that in my house, haha) 1 Cup Milk 4 Large Eggs 3 TBSP Sugar 1 TSP Vanilla Extract (I just use a lid full of it) 1...

Annual Bills and anticipating them

One of my main resolutions for 2018 was to take a long hard look at my budget and become better at anticipating expenses. Personal Budgeting one of my favorite topics, not because I excel in this area, however it is something I’m always working on getting better at. It’s a lifelong goal. I love learning how other people budget and I devour books that give me different tips and tactics on how to budget. This year I decided that I was going to make it my goal to start anticipating annual expenses better. For instance, I know that there are two times a year where I always get tripped up, late summer and Christmas.  August is the month where all my annual bills come to hit me, it would've been smart if I had them all spread out but it is always August where I am hit with all my annual insurances, amazon prime, car registrations, (and occasionally a summer vacation).
